Inspired by the Negresco’s famous 1913 dome, our head pastry chef Fabien Cocheteux has prepared a delicious surprise for the end of year festivities. Pastel pink, which suits the 5* hotel on the Promenade des Anglais so well? The glazing, as mouthwatering as in childhood memories. The decoration? White chocolate and cocoa butter. But the surprise is inside. A subtle harmony of citrus fruit and Grand Marnier.
Composed of sponge flavoured with blood orange and mandarin, white chocolate struzel and light blood orange mousse with Grand Marnier, this Yule log is melt in the mouth and crispy at the same time.
Perhaps this is the head pastry chef’s secret? A combination of sweet and tangy sensations reflecting the extravagance of the legendary architecture.
